Should you refrigerate sugar cookie dough before baking?
this is the recipe im using : http://www.foodnetwork.com/recipes/gale-gand/chewy-sugar-cookies-recipe/index.html
it doesnt mention what you should do if using cookie cutters. i saw in a lot of recipes that the dough is refrigerated for 15-30 min. but is it necessary?
Yes, it's necessary because the dough gets warm from your hands and chilling makes it easier to roll the dough out.
If you use cookie cutters it helps to dip them in flour first to keep the dough from sticking to it. It doesn't have to be heavily coated with flour, just slightly and only do it cutting every few cookies or so.
