What is a good cookie or cake base for a white chocolate mousse that is going to be plated individually?
This mousse is going to be plated four different ways and paired with raspberry and blackberry coulis along with other garnishes. This is for my huge end of year pastry competency exam.
How about a nice, simple sponge cake slice? Or maybe a pound cake slice?
You could soak a ladyfinger in raspberry liqueur briefly, then top it w/ the mousse....
Mmm, I'm making myself hungry.
