What kind of cutters do bakeries use? I heard about some kind of cutter that uses compressed air to push the cookies out of the cutter? What is the best way to mass produce cookies that are precisely cut?

There might be a tool and die business around where you live that would be willing to give you some advise about this or even offer to make it for you. Maybe, he'll make one for you and you could take it home to try it. Then bring him some of the cookies you baked and you just might have a whole set of special cookies cutters to use.
