wedding cake cookie favors?
I saw some cookie favors that looked like wedding cakes in a Brides magazine. So I bought a cookie cutter that looks like a 3 layer cake and some little celephane bags to put them in, but I'm not sure of of what kind of cookies to bake. I would like to bake them about a week to 10 days in advance. What kind of cookies will keep? (Not gingerbread-please) Also, any suggestions for the icing (melted white chocolate?)
and decorating
Butter Cut-out Sugar Cookies
1 cup butter, softened (no substitutes)
1 cup sugar
2 eggs
1/2 teaspoon vanilla
1/2 teaspoon almond extract
3 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
In a large bowl combine butter with sugar, eggs, vanilla and almond extract; beat using an electric mixer on high speed until light and fluffy. In another bowl combine the flour with baking powder, baking soda and salt; gradually stir into the butter mixture until well blended. Cover bowl with plastic wrap and chill for 2 hours. Set oven to 400 degrees F. Line cookie sheets with parchment paper (do not grease cookie sheets use parchment paper only). On a very lightly floured surface oll out the dough into about 1/4-inch thickness. Cut into desired shapes using cookie cutters. Place cookies 2-inches apart on cookie sheet. Bake 4-6 minutes. Remove cookies to wire racks to cool completely before icing.
Professional Decorators' Icing
1 lb sifted powdered sugar
1 tablespoon meringue powder
1 cup Crisco
3 tablespoons water
1 teaspoon vanilla
Combine the shortening, water and vanilla. This will take some time to mix up but it will eventually. Add the meringue powder and powdered sugar. Mix well - beat for about 3 minutes. *If this is way too stiff you can add a little water at a time. Just remember you want this to be a little thick so you can spread it* Frost cookies and allow to set on wax paper.
