Special Valentine Snacks
With Valentine’s Day fast approaching, considering making some simple Valentine’s snacks that the kids can bring to school? Whether you are making them for your own child’s lunch or as a special treat for the class, following are some snacks that are simple to transport and simple for the kids to consume once they dig in!
Marshmallow-Popcorn Hearts are a simple twist on popcorn balls. With this recipe, you can skip the Karo syrup and simply melt some marshmallows instead! This quick and simple recipe is similar to Rice Krispie bars, only with popcorn instead!
Here’s what you need to get started:
• 10 cups popped popcorn
• 3 tablespoons margarine or butter
• 1 10-ounce package regular marshmallows
• Red food coloring
• Red colored sugar
Directions
• Put the popped corn (minus the unpopped kernels) into a 13 x 9 x 2 inch baking pan and keep it warm in your 300 degree oven.
• Melt the butter/margarine and marshmallows in a large kettle or in the microwave. (Microwave: 1 ½ to 2 minutes, stirring once) Stir the mixture until it is smooth, no lumps, and then add the red food coloring.
• Stir in the popped popcorn- about half at a time.
• Wait 10 minutes or so until it is cool enough to handle.
• Grease individual heart shaped pans with butter.
• Press the popcorn mixture into the greased pans.
• Cool the popcorn hearts. Remove from pans. Sprinkle each with red colored sugar.
• Wrap each individually in plastic wrap- pink or red finishes it off nicely.
• Makes 9 hearts.
This one is a little messy, but for an extra-special treat, exceptions can made to almost any rule. Take along a pre-packaged wet napkin in a zippered plastic bag to aid in simple clean-up.
Candy Apple or Caramel Apple Valentines-
1 bag of caramels
1 pack of craft sticks (like popsicle sticks)
1 bag of apples or your choice
wax paper
cake decorating tool
Flavored icing
Melt the caramels or hard candy according to the package directions. Insert a craft stick into one end of each apple. Dip the apple into the melted caramel, covering it entirely. Lift the apple and let it drip for a few seconds and then set it on the wax paper until entirely set- about two hours) Use a cake decorating tool (or a plastic bag with a hole in the corner and a decorating tip) to write a sweet message on each apple. Wrap in plastic wrap and secure the wrap at the top of the apple with a rubber band, leaving the stick exposed as a handle.
Finally, you can whip up these peppermint stars from a quick meringue batter. They make a sweet little treat that carries well in a lunch.
Peppermint Stars
Makes: 45 cookies
Prep: 30 minutes
Bake: 15 minutes
Ingredients
• 2 egg whites
• 1/2 teaspoon vanilla
• 1/4 teaspoon cream of tartar
• 1/2 cup sugar
• 1/4 teaspoon peppermint extract
• Red food coloring (optional)
Directions
1. Place egg whites in a medium mixing bowl; let stand at room temperature for 30 minutes.
2. Line two large cookie sheets with brown paper or foil; set aside.
3. Add vanilla and cream of tartar to egg whites. Beat with an electric mixer on medium to high speed until soft peaks form (tips curl). Gradually add sugar, 2 tablespoons at a time, beating until stiff, glossy peaks form (tips stand straight) and sugar dissolves. Quickly beat in peppermint extract. Tint pink with several drops of red food coloring, if desired.
4. Using a pastry tube with a large star decorating tip, pipe cookies onto prepared cookie sheets (form cookies about 1-1/2 inches in diameter). Bake in a 300 degree F oven for 15 minutes. Turn off oven and let cookies dry in oven with door closed about 30 minutes. Remove from cookie sheets. Cover and store in a dry place. Makes 45 cookies.

Diverticulitis involves an inflammation and infection of pockets within the colon that have food stuffs or stool blocking the opening of the pocket. The disease comes out of having diverticulosis, which involves many such pockets in the colon, often due to constipation and a low fiber diet. Low fiber diets cause you to strain at the stool so that the pockets form because of the extra pressure in the colon. Diverticulitis and diverticulosis increase with age. It is necessary to cure diverticulitis when it occurs because failure to do so can lead to rupture of the diverticuli (pockets) and diffuse abdominal infection, which is often fatal if not promptly treated.
There are ways to cure diverticulitis at home using oral antispasmodics such as Bentyl (dicyclomine), Librax (chlordiazepoxide), Donnatol and Levsin (hyoscyamine). These keep the pain at bay by blocking the spasms of the lower colon. One can also use painkillers which tend to slow down the movement of the digestive tract and take care of the pain of the infection. Doctors also cure diverticulitis using strong antibiotics that kill the infection and return the diverticulum to its normal state. Such antibiotics include Cipro (ciprofloxacin), Flagyl (metronidazole), Keflex (cephalexin) and Vibramycin (doxycycline). These antibiotics can be given in oral form if you are staying at home and don't have a severe infection.
The best way to cure diverticulosis that is severe is to restrict the diet to a clear liquid diet, hospitalize the patient and to use intravenous antibiotics and intravenous pain killers. In very severe cases, the individual with diverticulitis sustains a rupture of the diverticulum so that they get an abscess of the area or a generalized infection of the abdomen, which often requires surgery to clean out the area and remove the damaged diverticulum. Bleeding within the diverticulum can cause bleeding from the rectum, which may necessitate a cure for diverticulitis which includes getting blood transfusions. Doctors watch carefully to make sure the blood count doesn't get so low as to require a transfusion and they follow the white count to make sure the infection is clearing itself out quickly.
The best way you can help your doctor cure diverticulitis is to manage your diet. When the diverticulitis is acute, you may have to consume a clear liquid diet. Clear liquid diets include the consumption of water, crushed ice chips, vegetable, beef or chicken broth, popsicles, juice pops, juice without pulp (like apple juice, grape juice and cranberry juice), coffee without milk and tea without milk. These do not stress the bowels out at all and allow the bowel to rest as it heals.
When you have gone through a cure for diverticulitis, you need to prevent it from happening again. This involves eating a high fiber, wholesome diet, free of junk food, chocolate, alcohol and other types of fast food. You should be eating a diet of high fiber foods, such as brown rice, high fiber cereals like Grape Nuts, whole fresh fruits, fresh vegetables, particularly broccoli, kale, cauliflower and celery, whole grain breads and whole grain pastas. This extra fiber is a cure for diverticulitis because it allows the stool to pass quickly through the colon and doesn't allow enough time for food particles to clog the diverticuli in the colon. This is why Western people have more diverticulosis and diverticulitis than world cultures, such as the Asian culture, which eats more fiber than we do.
While you can cure diverticulitis, you cannot cure diverticulosis. The best thing you can do is prevent it from happening altogether by eating a high fiber diet for your entire life. Diverticulosis increases with age so it is not too late to start eating a healthier diet that can prevent the progression of a normal colon to one that has diverticulitis.
