making cream cheese mints with mini cookie cutters?
I'm making cream cheese mints for a baby shower. I bought some miniature cookie cutters and have decided to roll out the mixture and cut out the shapes like cookies since I need to make so many. Seems like the molds take a long time. Has anyone ever done this? Any tips, ideas, recipes would be appreciated. Thanks for your help!
I have made a lot of cream cheese mints but I always use the rubber mold. When using the molds the cream cheese mixture is pretty soft and you dump them from the mold onto granulated sugar. If you wanted to roll them out, I am pretty sure you could put the mixture in the refrigerator and it would get stiff. You could then put a piece of waxed paper down and sprinkle granulated sugar on it. You could then roll the dough out and cut it. I would think you would want to remove the scrap pieces and not the cut out pieces. If you do this though the cut out pieces will have granulated sugar on them, if you were going to try to re-roll them. The molds always went really fast for me.
This is my recipe:
MINTS
1/4 of an 8oz. pkg. cream cheese, room temp.
1/4 tsp. mint flavoring
1 2/3 cup powdered sugar
Mash cream cheese and add flavor and color. Mix sugar, knead with hands.
Make into balls size of marbles. Place one side in small amount of sugar.
Press, sugar side down, into mold. Unmold at once on waxed paper.
Makes 23 roses and 23 leaves.
for chocolate mints..add 3tsp. cocoa and 1/2 tsp. vanilla.
