Food ideas for Western party particularly dessert?

I am planning a western themed party for around 50 people. I am planning to serve BBQ steaks, potato salad, coleslaw, green salad, corn on the cob and rolls for the main and corn chips and crudites with guacamole and salsa as snacks.

It's a birthday party so there will be cake and I'll probably have watermelon for a healthier option, but I would like ideas for other western themed desserts please.

I would also love if anyone would be able to help with the quantity of food I would need for a buffet for fifty, and any other general suggestions for decorations.

For decorations: you can turn cowboy hats upside down, line it with a bandanna and insert a bowl of whatever.
Hang a sign near food....have it either say "Chow" or "Come an' Git it!"

Denim tablecloth (make one yourself using fabric glue and random pieces of denim, use different lengths and piece together...or do patchwork pattern)..or checkered layered over red. Red and white (2 colors) napkins, alternating colors. Or silverware bundled in napkins with a sheriff's badge on it.

Sign over your door when entering: ____ &____'s OK Corral

Hay bales, cactus plants w/bandannas wrapped around the pot---little toy spurs in the pot

Small galvanized buckets filled with dried beans or popcorn kernels to hold candles--or fill the buckets with water to hold fresh wildflowers in assorted colors

Cowboy boot pinata

"Wanted" posters (tea stain paper to make it look worn and old)...use your faces, pics or other guests' names and faces

Hang lassos up as "garland"-----also, find some cowbells

Make a "centerpiece" or display by putting together a collection: an old metal or enamel coffeepot, a bandanna-lined basket filled with something, a collection of old metal coffee mugs, some bottles of hot sauce

Play Horseshoes (of course..;)).....have toy plastic horseshoes labeling the foods

Give away gifts wrapped in bandannas or denim with a label saying "I did some boot scootin' at ___&___ Buckaroo Bash!" (maybe a small cactus plant to each guest?)
